I've never had to give eye drops to a cat; I always assumed it was at least a two-person job.
The whole 'hold its mouth open while you drop in the tablet' approach was never going to fly with any of my cats.

It varies from cat to cat
If you get ours at the right moment you can administer a pill, but they need to be sleepy. Albie, my sister's massive black floof, has been okay with the eye drops so far but I think he was a bit subdued and poorly on Sunday. Now he's on the mend he's putting up more of a struggle but if you get in quick you can get it done before he knows what's happening. He's not the brightest spark.
