I think series that follow a relationship tend to fall apart because no real thought is given to what happens after the characters get together.
As no thought has ever been put into SA......

There are some series where it kind of worked. 'Friends' and 'The Big Bang Theory' although they have larger ensemble casts. The ones with a male and female lead seem to fare less well.

Castle is managing to keep it interesting
Mainly because they have to keep it all a big secret from their boss, so there's still tension there. Also, she's not a cat-woman hybrid thing, so no bestiality issues either.
