your taste buds have just re-adjusted
if you take a pinch of sugar and place it on your tongue
the mint flavour of your gum will return
adding salt to soda water makes it taste sweeter....

That is rubbish.
I tested out the theroy that it's just your taste buds getting used to the flavour that makes it fade. My GF chewed some gum for about half an hour then I had a chew (omfg spit share!) and it tasted of virtually nothing.

but that's several mouthfulls of taste each time
with it's own natural sugar/salt to reset your buds with each bite

they say it's easier to eat a plate of mixed tastes
than it is to eat an equal measure of just one taste
but i don't know if that's relevant
