You keep hearing about vampires surviving the burbonic plagueand they get eternal youth, so I would I guess that vampire's bodies are stuck in the point of time they became vampires, more or less (the whole molecular structure would be operating on different rules, nothing would decay internally either, so there's some fortitude there, but you also get to do stuff like eat so your organs do keep some of their original functions).
