Potatoes are no go once they start to sprout, and definitely if there are green patches

Unofficially- they're fine. The green bits are worth cutting off, but they're not really poisonous, it's just a combination of old wives tales and a throw away culture

Otherwise (especially with veg, and it's just gone a bit soft or wrinkly) it gets chopped up and made into vegetable stock which I freeze for soups and stuff.
