The Directors Cut is really just an extended version that was made to show in film festivals before general release.Romero himself prefers the standard Theatrical one.
There is also the Argento version, which is shorter with more emphasis on the action, and has more of the Goblin music in it. Sadly I've not found the time to watch it.

i've seen the argento versioni think it's about 20 minutes shorter than romero's director's cut. the standard one is still the best, though.
