actually I was also toying with the idea of allowing syllables that have the vowel first, by mirroring the whole thing left to right.

I'm not sure about that
it closes the gap for words with vowels, but it still leaves words with only vowels wanting.
i.e. "I" "ooo" "eei" "awwww/auuu" etc.

No, but it would add a extra layer of complexity.
I think there is an elegance in keeping it as simple as possible.
