I liked Chocks Away on the Acorn Archimedes.
Last really good dogfighting experience I had was back in the day, with Battlefield 1942. These days it's all helicopters and shit. I remember when all this was fields...

IL-2 Sturmovik: Birds of Prey was fun but a little arcadey for my liking.
I don't think anything has topped X-Wing vs Tie Fighter for sheer mayhem though.
