that's why she didn't snap the head off too quickly, I imagine. I assume blood draining keeps things fresher and cleaner to butcher later.
I am not much of an authority on meat, so I might be talking tosh, but that is how I interpreted events.

Cooling helps reduce meat being spoiled by bacteria, and so keeps fresher longer.
