The historical events that the Star Wars sagas we're most familiar with are based upon took place largely around the late 18th to 19th centuries. Star Trek - in which Spock appears - on the other hand, is set in the future, hundreds of years after the events depicted in Star Wars.
So, no. Not dead, exactly. Just not born yet. Not until the year 2230, to be exact.
