
I thought people used a vacuum to remove bubbles in epoxy?

Presumably using high pressure causes them to shrink or dissolve.

Vacuuming removes bubbles by expanding them enough to 'boil' out of the mixture. Pressure pots force the trapped gas into solution for long enough that they stay dissolved until the epoxy sets. On balance I prefer the vacuum solution, but the pressure pot is simpler and cheaper.
