How about,
a youtube player. Play your SNES, NES, MAME roms on it. Put shit loads of games onto your memory card and play off that. Also a PS1 emulator. Even Gameboy and Atari if you want to get old school.
A pdf reader for books. File management. Tell me what you want what you really really want.
Is it one of the cool old fat PSPs, or a weedy slim one?
