Edit: In fact if you have never had oxtails they are delicious and you have promted me to make it! I haven't had it for 20 years.

And use oxtail instead of scrag end of mutton neck. The recipes are so basic that they can be used as a base, I added a bit of dill and nutmeg to my soup, cos that's the way I ride.
