I've seen a documentary about food photoshoots before. At least McD is using their actual products in the photos (or so they claim). More commonly they use anything they can get their hands on that looks right. Mash potato for ice cream for instance.

we used internal splints made of cocktail sticks to make food look bigger, sprayed silicon polish on the lettuce, and used cigarette smoke for that 'steaming hot food' look.
