somebody told me the way they can change colour like that is due to sucking water in through pores in their skin. But that could all be lies....

Sounds unlikely!
I know that some use chromatophores which are coloured cells that can be expanded or contracted, so expand all the red ones and hey presto your red. I didn't know octopi could change the texture so much though.
