American cheddarAlmost without exception is complete shit. Cabot do a good mature cheddar, as do some of the other North East creameries. Since my local Costco started selling real English mature cheddar (made by 'Coastal', whoever they are) there's been no need to pollute my body with the fake American pretend cheddars though.
