I thought sweetbreads usually referred to the pancreas?Hence "sweet" because it ought to be at least a little.

Just wikipedo'd it.You're right, sweetbreads include the testicles, the thyroid and the pancreas (amongst others). I was thinking it was mainly pancreas on account of the name and the role of the organ.
