Itdoesn't boil off completely - a quite significant proportion will remain.

umalcohol boils at 86 degrees, water at 100, so if you allow your food to boil (which leads to it actually cooking) you really do boil off all the alcohol.
This is a good thing, this allows me to drive after eating.
