That's likely down to the plant having genes for both colours in the first place, and various factors in cell replication leading to the expression of one colour over the other.
What I mean is that the change is "inside" the plant all along, and hasn't been caused by cosmic rays or anything fancy like that.
Sorry if I sounded patronising, that wasn't my intention at all.
