I haven't used Excel for quite a while,
but I would check a couple of things first -
Does it do this with the autoformat/autocomplete on any other programs? If so, what does her computer's clock reckon the date is? It's possible that something (e.g., that virus) has confused it.
Otherwise, I'm pretty sure there's something on Excel for personalising your settings (not sure where as I don't have it on my own machine), which could well override the settings on the template. It's probably under something like "Options," or "Settings."
(Apologies if I'm just suggesting obvious things that you've already tried!)
