I think if you plan it carefullyyou can find plenty of vegetarian-friendly places. That means you'll want to make sure you go through some of the larger towns and cities.
Richmond is actually a pretty nice city, despite my grousing. As more of us northerners infiltrate it's getting some decent restaurants and nice bars, and they're getting more tolerant of gays, people with tattoos and other "freaks".
Should you actually drive around the US and get the urge to play tourist around DC, let me know- I live about two hours from there. And as I have a vegetarian daughter, I think I might be albe to steer you in the right direction around here...
