jpeg is a compressed image file- it only records what it sees as the colours available and records them in it's limited capped ability. RAW records the quantities of light and has a massive understanding of what it is it sees- if you take a RAW b+w then it will still retain all the info to transfer it back to colour. It also records in adobe 1998 as opposed to standard RGB, so has a much wider spectrum.
