At the bottom of the Royal Mile hillis the Scottish Parliament building and next to that is a big lookout hill with a great view of the whole city. If it's a nice day, take a sandwich, hike up there and chill out. It's a bugger of a slope if you take the 'short' path though.
Grassmarket has some brilliant bars too. Less touristy and more studenty for low, low prices.
