You see both on commercial records
Sometimes, especially on first albums, there's a whole screed of names in the acknowledgements list, right down to the band's cat, but on others you don't see any.

It's up to you. Personally I'd find a whole list rather tedious and wouldn't bother reading it anyway. I'd just say thanks to a few individuals, like your man with the studio, and then a general thanks to 'all of the other people who are too numerous to name individually, but without whom we'd not be where we are today', or some such shite.

sounds like it will be a mix of both.

saying that though, our singer hasn't been involved yet and he will probably have some fucking stupid ideas to throw in and will get his way.
