ps - artichokes are the least sexy but taste lovely. I don't know if there is a difference between your regular artichoke and your Jerusalem artichoke but as a callow youth reading pages of poetry stained with butter drips from crumpets, I read the French word for the Jerusalem artichoke is 'Topinambour' which I have always thought a lovely word.
