if you're seeing someone, chances are you know them well enough to trust them, and you'll already have a fair understanding of their beliefs and thoughts.
Sexual partners is just a number, some people have more than others, people go through phases, it doesn't necessarily have any bearing on who that person is now

What matters is the person you are with now, and providing they are clean of any STD's, knowing their past is entirely optional.

I wouldn't say thir whole past is optional
but I wouldn't need to know an exact figure before I made my mind up about someone

True - I think you need to understand the person (and the history that makes up that person).
Knowing exactly how many one-night stands/drunken fumbles is optional.
