Yes, i do have incredibly sharp knives and a steelHowever, I want the electrified dazzle and consistent thinness that comes courtesy of the dangerous spinning blade. Even the sharpest of knive has trouble slicing a joint of siverside into perfectly uniform 1mm slices.
