Haha, I had the itunes problem as a Linux user
Try some things like Floola, Winamp (it has ipod support now) and GTKpod, which'll put pictures over too. Floola is the best if you want album art, but you have to put it in manually. The key is deleting 'itunes lock' from the folder when you mount your ipod.

I use Amarok, which works a fucking dream, but as it's a new iPod I can't transfer pictures yet.
