I'd only bothered training one Pokemon up for the Elite Four and it was my starter. I kicked all sorts of arse.

Basically. I had one of those grass monkey pokemon to make up for the fire weakness to water. He was at about level 30. My starter was at 60.
The rest of my team were fodder.

Yeah, I start off every game with the plan of raising a whole team equally and then I get bored around the fourth or fifth gym and just plow through.
Luckily there's loads of strong trainers after the main storyline ends you can use to level up. The Elite Four's average level goes up to about 75, and all the trainers in the new areas you unlock are at about 65.
