Started with organic wholemeal
it was okay, bit close crumb but nice crust, cooked all the way through. Could probably do with a smidge more salt.

You do have to be quite careful, but a little over the recommendation isn't usually a bad thing.

non-sourdough wholemeal will have a close crumb by definition
