Morning
I got a breadmaker machine yesterday and had breadmakermachinemadebread toast for breakfast. It was fine. I think it'd be better if the yeast wasn't BBF 2021.

Wait until you're making sun dried tomato and olive loaves
Then come back and talk to me, fucko

Started with organic wholemeal
it was okay, bit close crumb but nice crust, cooked all the way through. Could probably do with a smidge more salt.
(, Tue 16 May 2023, 8:59, archived)
It's underestimated in breadmaking, salt
You do have to be quite careful, but a little over the recommendation isn't usually a bad thing.

non-sourdough wholemeal will have a close crumb by definition

Morning
Bread is one thing that I have never mastered. It's always too doughy.
(, Tue 16 May 2023, 9:41, archived)
I'm getting reasonably good at it now, after a number of failures
practice (and a decent recipe) really does help

in other news I have a phone interview with the MD of a luxury cookwear supplier & cookery school, I'd really like the job. Just waiting to hear when the call is

Sounds great
I would love an interview with the makers of Le Creuset cookware, just to see if I could get some freebies. I won't bother trying to make bread again, not worth it, considering how much eating it hurts.
(, Tue 16 May 2023, 10:13, archived)
we've got an almost full set of Le Creuset stuff which were indeed freebies
sister in law used to be a stylist for wanky New York magazines and as such got a shitload of fancy stuff over the years
(, Tue 16 May 2023, 10:36, archived)
Nice
Saw a lovely looking red Le Creuset casserole dish and cover in a charity shop for ยฃ5. I was going to buy it, until I looked inside. Absolutely fucking ruined.

You can get them re-enamelled I believe

(, Tue 16 May 2023, 11:53, archived)
Have you tried baking it in an oven?

(, Tue 16 May 2023, 12:12, archived)
you can test the yeast buy adding a couple of teaspoons to a bit of warm water and some sugar
if it foams up after 5-10 mins you're good to go. Tip 2 = keep it in the freezer and it will last pretty much indefinitely

tl;dr morning
(, Tue 16 May 2023, 9:41, archived)
I keep mine in the fridge
There are some hand recipes where I kick off with warm water and yeast.
