I either put it in pho
or marinate it in extra virgin olive oil, garlic, chillies and a bit of ginger, then flash fry it and chuck it in a salad

have you ever used those pho stock cubes you can get in the Asian supermarkets?
really not bad at all for the price, especially if you go mad with the fresh mint etc
