deep pan, make a whirlpool, use very fresh eggs.

Yes - very fresh
...but take my advice - don't use eggs that are so fresh that they're still in the hen. In my experience, that makes for a very messy kitchen, marital discord, and the threat of prosecution from various animal welfare agencies...
