DS9 has the Ferengi brothers, Voyager has Neelix, Enterprise has Wesley, ToS has - well - everyone...

I haven't seen that much Voyager but there was one where they were role-playing in the Holodeck an Ed Wood type B Movie called "Captain Proton" and Janeway had to be the Queen of the Spider People. Very good clever and funny.
