Is there really any difference in an ethical perspective between eating dog meat and eating cow meat, though?
Many of us eat octopus and crab despite the overwhelming evidence that they are sentient beings capable of feeling fear and pain. I'd argue that if you're prepared to boil a lobster to death or eat some freshly seared cow flesh, then you shouldn't turn your nose up to dog just because you've been conditioned to believe that they are somehow more deserving of life/less deserving of butchery than any other animal.
If you're the type of person that is quite happy to dig into a sirloin steak, then I think it's prudent to consider why you think it's alright to stick a bolt through this particular being's skull, but not that particular being's skull.
Not a dig at you, FCM. Just a general observation about the amount of cognitive dissonance a lot of westerners (in particular) apply to the consumption of meat.

They really need to bring back Kill It, Cook It, Eat it.
Personally, I don't think we should kill them, cook them or eat them. But I'm not one of those angry militant vegan wankers that believes that hateful finger wagging and shaming will do any good whatsoever in winning hearts and minds.
However, if you really stand behind your eating of meat (and people have every right to continue eating meat if they so wish), then that choice should be an informed one based on an explicit, first-hand knowledge of how that meat gets from a farm/pasture/high intensity meat factory onto your plate.
If folk are unable to stomach the process, they should probably re-evaluate their diet.
That's just like, my opinion, though.

Apart from cultural, zoonotic, and nutritional reasons
why we eat or don't eat any particular species of animal in different parts of the world, the unique co-evolution of humans and dogs must have protected dogs from most of us serving them for dinner

Your point is vague. All animals that we've domesticated share unique co-evolution with us, especially cows, pigs, chickens, etc.
My theory: Cooperation with wolves/dogs in hunting and pest control means you're less likely to need to eat a dog.
