I always thought it was:Universal... as it was ported to all the operating systems and compiled for all the processors.

according to Wikipediaat first the U stood for "Ununsable", then "Unix", and then nothing at all in particular but is sometimes thought to stand for "Universal" or "Ubiquitous".
