That's easy.
During the slave transports, the slaves where packed into the holds of the ships like bacon, or bacoon, as it was known at the time.

The phrase Bacoon to describe a black person fell into disuse until 1848 when Bruce Forsyth used it in his stage act with the catchphrase "This Bacoon tastes salty".

The contraction 'coon didn't become officially racist until Bob Geldof used it during Live Aid in his famous televised "These coons are fucking ravenous" rant.
