Well...in Italian it's just 'bariste', but I'd have thought 'baristas' is OK in English. Not least because you might get a smack in the gob for being a pretentious twat if you started calling people bariste.
Besides all of which, bollocks to barista. Nothing wrong with coffee monkey.
