I worked in a hotel in the 90's and one of my jobs was to clean out the kitchen grease trap once every couple of weeks. This involved ladling out the contents of what was effectively a giant sieve that collected any solids that were washed down the kitchen sinks.
After doing this you'd be up all night retching due to the stench that got stuck in your nostrils and throat.
Nowhere near as horrid sounding as your story though!

No matter what's gone down them, grease traps will always smell like parmesan cheese.
I'd usually clean it out on a quiet shift, because the smell would discourage the waiters from hanging around the kitchen entrance and make them move a bit faster.
