They have the disadvantages of motorbikes and buggies in one and none of the advantages -- unless you're a farmer who wants to move hay about on flat ground or very, very carefully on slopes.
If you want fairly safe fun off road then "Madtrax" type buggies are your best bet -- if you want faster and more risky motorbikes can't be beaten for all-out fun. Quads are dangerous and boring -- I can't think of a worse combination.
