Aged beefWinestain, aged beef is beef from regular aged beasts (usually under 2 yrs of age) that is slaughtered, chilled on the carcass for 20 hrs or so, then boned out into the primal cuts. These are then vacuum packaged and stored at 0 degrees for anything up to 30 days. This has the effect of tenderising the meat further, without allowing bacteria to get in and kill you when you enjoy your steak.
