I think the best option is for you to not invite vegetarians to your house if you're not willing to cook for them.

It's a two-way street. I cater for your vegetarian-ness, you should cater for my taste.
Because that's all it is - a matter of taste (well - in a vegetarian's case, pretentiousness, but I suppose that's a type of taste).
