I'm not really sure how "hilly" or windy Edinburgh is but Shirley when there's ice on the roads, that must make your job a little hard?
Maybe combining kite-surfing with rick-shawing could fix that problem.

MaybeEdinburgh is built on a series of bloody great hills, although it tends not to be too windy.
