I read a really interesting article about him once. He said he used to be the sweary, shouty type, and then one day he actually hurt someone while they were cooking, and now even at the worst points he runs a calm kitchen. If someone doesn't pull their weight he makes them stand in the middle of the kitchen and watch as everyone else struggles to pull the extra weight, until they're absolutely desperate to get back to work and help.

Raymond Blanc has the genial frenchman vibe going. The Roux family seem like decent sorts. The older ones at least.

I have a particular dislike for Marco Pierre White for some reason.
