You only need about half an hour in water for ribs
so coke should be the same.

I wonder what would happen if you used *spit* diet coke? it'd be much less likely to burn...

I wouldn't want to risk it being shit
because of the sweeteners, so will go with regular coke.

I have basically zero experience with boiling meat. I'm thinking to avoid burning sugar that I'd be better off going with not quite boiling, and for longer. What do you reckon?

a very gentle simmer should do it.
just keep checking it.

I boil ribs just in water and then make a sticky thai glaze for them for the bbq and it's absolutely lovely. But I'm liking your plan muchly, let me know how it goes?
