I've downloaded it, but seem to have lost all my apps and my music on the phone. When I sync iTunes it doesn't give me them back, though they are there.
Annoying.

Ditto, that's happened to me so many times throughout the beta, the backups never do _everything_ for some reason.
At least now all OTA updates won't do that anymore.

I've no idea what OTA means. I am having to manually reinstall the apps via the handset and haven't a clue how to get my music back
The Apple help section isn't at all helpful.

Over The AIr.... all future updates won't require all your software being reseted.

Yeah the music is in the library, but the phone is empty and syncing the phone doesn't transfer the music.

Ahh, in itunes, plug yourself in, and click on the "[name]'s iPhone" under devices in the side menu.
Then select "Manually manage video and music".
