You can't really go wrong with anything between his 2nd-7th albumsOutside of that it is pretty much down to personal preference - there are some gems, some duff ones.
As Chompy refers to, he had a bit of a return to form in the mid 70s with Desire.
Or just go for The Best of Bob Dylan.
