I think it's most likely that just lots of humans die.
Plants and animals on a whole will get along better without us, even with fucked up weather.

The planet has been through more extreme weather cycles than we can ever force upon it as humans
The planet will be absolutely fine. As will life on it. Just not all current life, in the areas it currently inhabits. That includes us
