I've personally setup an ex Vodafone 8800 on O2 for my mum.
The bigger issue will be getting the BlackBerry PIN number disassociated with Vodafones BIS server.
You'll need to ask the old owner to call Voda to get the PIN unregistered from their system. Last time I had to do this it only took about an hour for the change to take effect.
Afterward you should be able to register the BB with O2s BIS no problem.
The other thing to bear in mind is that currently the BB will be running Vodafone's customised version of the operating system with links to Vodafone Live! And so on. You'll be best off either loading O2s version or the standard RIM edition.
Crackberry.com has some good forums who should be able to answer your questions.
