Recently, I used an advertised job opportunity to get more money from my current employer
this has worked out nicely with them straight away offering my a decent increase in pay.

I didn't particularly want to leave the place I work now anyway, but now they're giving me more money it's certain.

However, I did send off my CV to this other company and now they want to interview me. I can't be arsed to get into some kind of debate with the new people about money, or go to an interview with them.

What can I tell them on the phone that will make me sound awesome, and not annoy them?

it's never a good idea to burn bridges
tell them about your employers sudden fit of generosity and see if they want to top it.

my current employers have been plenty generous enough though
and I prefer the company I'm with now and I'm certain that the work I will be doing is better, and there are better prospects.

hence wanting to let them down gently without having to take the time to go for an interview.

You need a little time, to think it over. It's not really working out too well, you've too many things going on in your life to make them happy as well, and they should employ someone who truly appreciates them for who they are.

it's going to be a combination of all of these because I can't pick a winner.

I particularly like the Jamaican patois, but the "it's not you it's me...I'm gay" also works for me.

Just tell them
That circumstances have changed since you made the application and that currently you don't wish to take the application further. Thank them for their consideration and express the thought that you do not wish to waste their time or yours and hope it will not impact on any future applications you may make. Job done.
